The National Institute of Espresso Italiano is active since 1998 with a well precise finality, that to protect the secular tradition of the Italian espresso coffee. The manifold experiments of autonomous production of coffee, often executed without following the specific rules of roasting or extraction, have brought to a real imitation of the original taste of the blend by operators in the international market. At the same time, the customs and the traditions of the various populations, naturally different, have conducted to the pollution of the original and ancient taste of Italian Espresso.
The Institute today is not only a Certifier of Quality, but has known how to determine in the years, a real index of reference for the quality of the coffee in cup, that considers factors such as intensity of the colour, the aroma, olfactory intensity, that of the roasting, the astringency, the acids and the body. From 1998 all that brings the Certified Espresso Italiano mark indicates that the coffee machines, coffee grinders, blends and whatever has entered the sequence of the espresso production, it is indeed faithful to the name, because tested by a group of taster and experts according to specific and precise sensory rules.
